Today we have a carrot soup with coconut milk, parmesan and toasted pine nuts.
What you need: carrots, onions, coconut milk, pine nuts and nutmeg.
You have to cook the carrots and the onions until they are soft, then you have to mix everything to a
pulp.
Now you have to mix in the coconut milk.
Seasoning it with a bit nutmeg, salt and pepper.
Roast the pine nuts.
Put the soup in a bowl, sprinkle the spoup with parmesan and put over it a few pine nuts. Ready!
